Get Fit!

After all the food I will be eating this weekend I'll be in need of a good workout! I've been searching everywhere for some new, interesting work-out machines that don't cost a fortune. I want something different than my treadmill, something that wont bore me and will encourage me to actually work out.

Kind of like this Evertone Hyrdo Motion Stepper, which has unique twisting actions that help work buns and thighs without stressing your bones and joints. For some reason no matter how much I work out, my abs always can use a little more work. I'm hoping this 4-Pad Pulse Massager will do the trick.  It delivers safe, effective electric impulses directly to your muscles. These impulses mimic the action potential coming from the central nervous system to trigger muscle contractions. 


After eating healthy and working out consistently I'll be ready to weight myself and see what I've accomplished.  This Big Dial Bath Scale is so accurate that they use them in doctors offices.
The extra large platform gives you more foot space and its over sized dial is easy to read. 


 I can't wait to start making progress and begin my journey to a healthy lifestyle!

Super Bowl Recipes Part #2

Last week I mentioned some of the recipes I intend on trying for the Super Bowl on Sunday and I have a few more I'd like to share.

Everyone loves ice cream, and we need dessert at my party so now is a great time to try out my Ice Cream Maker.  I found this great recipe for Rhubarb Ice Cream, yum!

Ingredients

Serves: 6 

  • 5 stalks rhubarb
  • 2 cups (500ml) water
  • 1 1/2 cups (330g) sugar
  • 2 teaspoons finely grated lemon rind
  • good pinch of salt
  • 4 strawberries (optional)

Directions

Preparation:8hours  ›  Cook:45min  ›  Ready in:8hours45min 

  1. Chop the rhubarb and strawberries (if using) roughly and add to a pot with all the rest of the ingredients.
  2. Bring to boil and simmer for 5-7 minutes-until the rhubarb is soft and falling apart. Let it cool, then puree in a blender or food processor.
  3. Push the blended mixture through a strainer to get the pulp out... but you don't have to be obsessive about this step.
Chill this mixture in the fridge totally - overnight preferably - and then freeze it in the ice cream maker for 45 minutes...or whatever your ice-cream maker instruction book says for sorbet.

And what's a Super Bowl party without a good meat and cheese tray? I came across these cute little footballs. What a great idea! I'll use my Heartland America Meat Slicer.


In my last blog I mentioned the mini burger recipe and I kept thinking how I should probably make some french fries to go with those. I can finally put my French Fry Cutter to good use with these recipe.

Ingredients

  • 3-4 Large Russet Potatoes
  • 1 pinch salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 pinch Lawry's Season Salt (optional)

{How You Make It}

Preheat the oven to 400 degrees F (200 degrees C). 
 
Cut potatoes with french fry cutter.
 
Place the cut  potatoes into a microwave-safe dish with the water. Cook on in the microwave for 5 minutes on full power. Drain off liquid, and toss with salt, pepper, and olive oil. Arrange fries on a baking sheet in a single layer.  

Bake for 30 minutes, turning once, or until fries are crispy on the outside.

Super Bowl Recipes

A little over a week until the Super Bowl and I cannot wait. Every year we host a big party with all our friends and family, it's a good time. I thought I'd share some of the recipes I plan on trying out this year.

I've been looking for a great deep fryer recipe since I got my Dual Deep Fryer from Heartland and I came across this Monte Crisco Sandwich recipe, it looks amazing!

Bennigan`s Monte Cristo
Serves/Makes: 6    |   Difficulty Level: 3    |   Ready In: < 30 minutes

Ingredients:
6 slices cooked turkey
6 slices Swiss cheese
6 slices cooked ham
6 slices American cheese
18 slices wheat bread
***Batter***
1 1/2 cup all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 1/3 cup water
1 large egg --beaten
Oil --for deep frying
Powdered sugar
Red raspberry jelly

Directions:
Assemble sandwiches: Bread, turkey, Swiss cheese, bread, ham, American cheese, bread; cut in half diagonally.

Whisk flour, baking powder, and salt together to blend well. Add water to the egg and add to the flour mixture mixing well. Dip each sandwich half into the batter and deep-fry (oil must cover the sandwich) in oil pre-heated to 360 degrees until golden brown.

Remove from oil to paper towels. Sprinkle with the powdered sugar. Serve with warm or room temperature jelly, if desired.

And since I got my Ice Maker I've been dying to find the perfect Super Bowl drink for all my guests. In honor of Peyton...

Manning Martini

Ingredients
- 1 part dry vermouth
- 1 part Bourbon whiskey
Preparation
- Add ice cubes in a mixer glass
- Pour the spirits into the glass
- Stir together
- Strain into a cocktail glass

And in honor of my Seahawks fans.

12th Man Margarita
13/4 ounces
Cuervo Gold tequila
3/4 ounce Blue Curacao
Sweet and Sour
Two lime halves


Salt the rim of the glass. Squeeze half a lime into the shaker, add tequila and Curacao and top off with sweet and sour. Shake with ice and pour into glass. Score lime with knife to create a football and add as garnish.

Of course we'll need more food so I plan on testing out my Mini Burger Grill and making these Super Bowl Sliders.

Ingredients/Instructions
  • 2 packages (about 12 per package) Hawaiian dinner rolls or whole wheat hamburger buns, 2 pounds chuck roast (have your butcher grind it fresh)Kosher salt cracked pepper 6 slices sharp cheddar cheese cut into quarters, at room temperature, ketchup, squeezed right from bottle, bread-and-butter pickles.
  • With a 2-inch biscuit cutter, cut slider-size buns out of the dinner rolls. If the buns are too thick (they will be if you are using Hawaiian dinner rolls), just press down to flatten them before using the biscuit cutter. They will bounce back just a little, leaving you with the perfect buns. 
  • Shape the sliders by rolling a golf ball size meatballs between your palms, then pressing them into 2-inch-wide patties 3/4 inch thick. You should have enough beef to make 16 to 18 miniburgers, maybe more. 
  • Sprinkle both sides of the sliders with kosher salt and pepper.
  • Grill for 1 1/2 minutes on each side, then flip over once more and add a slice of cheese on top of each burger. Grill for 1 minute, until the cheese has melted (if you have a large enough lid, cover the burgers, as this will help the cheese melt quicker).
  • Transfer onto buns and serve.

The Super Bowl isn't complete without a ton of crock pot dips. I love trying out everyone's new dips, sometimes we'll get some really good ones, sometimes they're a little strange. Here's my favorite.

Creamy Sausage Dip
Ingredients:
1 block of Philadelphia Cream Cheese
1 small can of Rotel Green Chili's
1lb. of Jimmy Dean Sausage, original for regular spice, or hot for spicy dip.

*Brown Jimmy Dean Sausage in frying pan until no longer pink. Drain grease.
*Add sausage, cream cheese and Rotel to medium crock pot and mix together.
*Let sit for a couple hours to merge flavors together.
*Serve with Fritos chips.
*Recipe serves 4-6 people, double recipe if needed.

Snowy Products

It's another snowy day here in Minnesota, nothing new, of course. The last couple weeks have been so brutally cold that were okay with a warm up and some snow. I'd take the snow over the -40 wind chills any day.
